Crinkle Cookies


These are my most favorite cookies of all times. The more chocolate, the better.

Original recipe from Cuisine at Home Holiday Cookies

Whisk together:
3/4 cup all purpose flour
3/4 cup sugar
3/4 t. baking powder
1/4 t. table salt

Melt 1/2 stick unsalted butter (4 tablespoons) stir in the following, fully blending each before adding the next:
1/3 cup cocoa powder
1 egg
1 t. instant coffee granules mixed with 2 T hot water
1/2 t. vanilla extract

Stir chocolate mixture into flour mixture just until combined. Fold in 1/3 cup semi sweet chocolate chips.

Shape into generous 2 inch balls using a #40 cookie scoop or a heaping tablespoon measure.

Roll balls in powdered sugar two times, then arrange on baking sheets lined with parchment paper, spacing 2 inches apart. Bake at 350 for 12-14 minutes, or until cookies are cracked, yet still soft. Let cookies cool on the pan for 5 minutes, then transfer to a rack.

Bonus points? Add in 1/3 cup dried tart cherries and make them Black Forest Crinkle Cookies!
