I had some leftover pumpkin from the pancakes I needed to use up. This morning I decided to mix it with oatmeal. It wasn’t too pumpkiny, just enough to make it deliciously fall.
First I made two servings of Old Fashioned Oatmeal without the salt. (I never use the salt)
Once cooked I added the pumpkin and a splash of whole milk. (There was probably 1/8-1/4 cup of pumpkin left.) Also add a dash of cinnamon, nutmeg and cloves to your taste. I added some brown sugar not so much for sweetness but because I like the flavor. In hindsight I would’ve been good with a bit of molasses.
Stir together and dig in!
